So the other day, my dad comes up to me with this recipe for bacon chocolate chip cookies. It seemed like a badass deal at the time so I decided to try it for myself. (Plus after my friend, John, was quoted, "It's like one of those things you see on 4-chan that you wish was real, but this actually is!" how could I refuse?)
I've taken the standard recipe (the one my dad gave me) but added a few things of my own, so here it is. Just in time for those quirky Christmas cookies; Bacon Chocolate Chip Cookies. (By the way, I have no idea who originally came up with the idea, or even the person who wrote this recipe that I based mine off of since I got it through my dad and haven't been able to find it since, so all props to them, whoever they are)
There's two parts to this recipe, the actually cookie part, and the glaze part. We'll start out with the cookie part since the glaze hardens rather quickly
Cookies:
2 1/2 cups flour
1 tsp salt
1 tsp baking soda
3/4 cup butter
2/3 cup brown sugar
2/3 cup granulated sugar (white sugar, for those of you who don't regularly bake)
1 tsp almond extract
1 tsp vanilla extract
1 tsp honey
2 eggs
1 cup white chocolate chips (optional, I used white/normal chocolate swirl chips)
2 cups bacon bits (use real ones, not Bacos)
Beat together butter, sugars, flavoring and eggs until creamy.
sift together the dry ingredients.
Preheat the oven to 375 degrees F. Sift together the dry ingredients. In another bowl, Beat together butter, sugars, flavoring and eggs until creamy. It's just habbit for me, but I always beat each ingredient together seperatly (like...beat the butter, then add the sugar and beat it then add the eggs and beat it) I know in the long run it really doesn't make much of a difference, but I've tried beating it all at once as opposed to my current method, and for some reason this way, the cookies stay...more fresh/chewyer(??) anyway, they taste better, longer.
Mix the dry and wet ingredients (stir until theres little to no grains of flour left) You're going to want to cook that bacon before adding it into the mixture. Even though it will be baking with the rest of the cookies, it's still a good idea to either microwave it or stove-top cook it first. Because of lack of time/patients, I nuked it (microwave) After preparing the bacon, add the cocolate chips/bacon bits (stir these in, too, until evenly spread) Take about a spoon full of batter and put it on the cookie tray. Bake for about 12 mins or until golden-brown. Dont burn them. (also keep in mind that different sized cookies take different times to bake)
Maple Cinnamon Glaze:
2 cups powdered sugar (not regular sugar, it wont work)
1 TBS mapel extract
1 tsp vanilla extract
1 tsp cinnamon
2-2 ½ TBS water (the original recipe said 3 TBS, but I found that to make the glaze much too soupy, so I down-sized it, but do whatever works for you. I suggest starting with 2 TBS and then figure it out from there)
Mix until smooth and creamy. If lumpy use a wisk. Spread small amount of glaze ontop of each cookie with a small piece of bacon. The glaze will run at first, but will quickly dry.
